A wonderful opportunity to experience the superb quality achieved in their 2015 vintage.

The Domaine des Trinités covers 24 hectares of the sun baked schist slopes of the Cevennes in the heart of the Languedoc. Here vegetation struggles against the elements with the meagre topsoil and underlying rock forcing the vines to push their roots deeper to find water and natural minerals. The result is that this area of schist produces uniquely expressive and complex wines that are set to raise the profile of the region with their elegance and character. The vines are divided between the classic dark schist of Faugeres and the adjoining yellow schist of the A.C. Coteaux du Languedoc, part of which has been elevated to the ‘Cru’ status of Pézenas from the 2009 vintage. The grapes behind the red wines are Syrah, Grenache, Mourvedre, Carignan and Cinsault – all of which are particularly well suited to soil and the climate. The Grenache and Carignan are up to 80 years old, with the Syrah averaging 20 years of age.

The cellar is a traditional Languedoc design being half underground to ensure a consistent and cool temperature; tradition and modernity sit side by side with state of the art winemaking directing the flow of juice by gravity, thereby avoiding the disruption caused by pumping through pipes between levels.

The wines are made with great care by husband and wife team Simon and Monica Coulshaw who ensure that the low yielding vines are carefully hand picked at around 25-35 hectolitres per hectare rather than the commercially permitted 50 hectolitres. Simon has made it his choice to cold macerate the Grenache for up to two weeks heralding a longer ‘cuvaison’ period contributing to lovely fresh, spicy fruit driven red wines with supple integrated tannins.
